This simple recipe is one of my 17-month-old son’s favorites. He loves it as is though I usually mix it into plain yogurt or into his oatmeal.
- 5 apples (any type, cored, peeled or unpeeled – either way works fine when I have made it)
- 1/4 cauliflower
- 1/2 tsp. ground cinnamon
- 1/3 cup water
- Peel apples or leave the skin on (your preference) then slice into several chunks or chop them (once they soften in the slow cooker, I have never noticed any issues either way once I toss them into the blender). Chop 1/4 of cauliflower head into chunks. Sprinkle cinnamon on top. Add water to slow cooker and cook on high for 3-4 hours or until soft (or on low for 7-8 hours).
- Add contents of slow cooker to blender. Cover partially with lid and place dish towel on top (this allows steam to escape but prevents any splashes). Blend until desired consistency is reached, adding additional water if necessary. Refrigerate until ready to use. Serve as is or mix 2 Tbsp plain yogurt into 1/2 cup serving. This recipe also freezes and thaws well.
